Get a Grapefruit from Grenada
Grenada Grapefruit Punch
This recipe is for one but load up to make a punch-bowl.
30ml bacardi rum, 100ml pineapple juice, 75ml grapefruit juice, 200ml of soda water, ice cubes.
Put ice-cubes in a glass. Pour in bacardi, pineapple and grapefruit juice. Pour it all into a cocktail mixer and shake. Pour the mixed cocktail into the glass again, then add sparkling water.
Serve with cherries, pineapple and umbrellas.
Grenada Chicken Wings with Nutmeg
8 chicken legs (or wings), ½ teaspoon pepper sauce, ¼ cup soy sauce, ¼ cup grated onions, 2 cloves garlic (crushed), ½ teaspoon salt, ½ cup of nutmeg syrup (see below), ¼ teaspoon ground ginger.
Nutmeg Syrup: 2 tablespoons sugar, 2 tablespoons water, 1 tablespoon dark rum, 1 teaspoon nutmeg. Bring sugar and water to boil in small saucepan. Cook and stir until sugar dissolves. Stir in rum and nutmeg. Use when cool.
Season chicken with salt, pepper, crushed garlic and onions. Bake for 15 minutes at 190ºC. Remove chicken from oven and baste with mixture of nutmeg syrup, soy sauce and ground ginger. Lower oven to 150ºC and continue baking for one hour, basting frequently. Serve hot.
