Best of British. Pimm's & Cucumber Sandwiches.
This makes a glass but load up and make a jug.
1 shot Pimm’s No. 1
1 slice each of orange, lemon, apple, and cucumber
1 strawberry, sliced
1 spear cucumber
1 sprig mint
1 lemon, juiced
1/4 teaspoon grated ginger
1 splash soda water
In a cocktail shaker, combine Pimm’s and lemon juice. Fill the remainder of the shaker with ice, cover, and shake for 20 seconds. Fill tall glass with ice, and strain shaken mixture into glass. Add the orange, lemon, apple, cucumber, strawberry, and mint and push into the drink. Top with ginger ale. Fill remainder of cup with ginger beer and garnish with cucumber spear.
Cucumber Sandwiches - Yumo!
1 packet cream cheese, softened, 1/3 cup mayonnaise, 1 medium cucumber, peeled, seeded, and finely chopped, 1/4 teaspoon garlic salt, 1/2 teaspoon chopped fresh dill, 20 sandwich bread slices, 20 thin wheat bread slices.
Process cream cheese and mayonnaise in a blender or food processor until smooth, stopping once to scrape down sides.
Combine cream cheese mixture, cucumber, garlic salt, and dill.
Spread cucumber mixture evenly onto white bread slices, and top with wheat bread. Using a 2- to 3-inch round cutter, cut sandwiches, discarding edges. Or cut crusts from bread, discarding crusts, and cut sandwiches into quarters. Store cucumber sandwiches in an airtight container for up to 1 hour before serving.
