Because it's summer - it has to be Pimms.

Pimm's

This makes a glass but load up and make a jug. 

1 shot Pimm’s No. 1
1 slice each of orange, lemon, apple, and cucumber
1 strawberry, sliced
1 spear cucumber
1 sprig mint
1 lemon, juiced 
1/4 teaspoon grated ginger
1 splash soda water

In a cocktail shaker, combine Pimm’s and lemon juice. Fill the remainder of the shaker with ice, cover, and shake for 20 seconds. Fill tall glass with ice, and strain shaken mixture into glass. Add the orange, lemon, apple, cucumber, strawberry, and mint and push into the drink. Top with ginger ale. Fill remainder of cup with ginger beer and garnish with cucumber spear.

Way to go Watermelon.

I'm seeing an abundance of watermelon in the supermarket at the moment. It must be time to indulge in a bit of tequila and watermelon. How good does this look? Yum. 

  1. 1/4 cup water
  2. 1/4 cup granulated sugar
  3. 8 cups diced seedless watermelon 
  4. 1/4 cup fresh lime juice
  5. 1 3/4 cups blueberries
  6. 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
  7. 1 1/4 cups  tequila
  8. Ice
  1. In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
  2. In a blender, puree the watermelon until smooth. Set a fine-mesh strainer/sieve over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
  3. In a large jug, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
  4. Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

A reliable source tells me The Scottish Lady is the perfect tipple for Race Day. I know race day has passed but what the heck......

30ml Scotch Whiskey

20ml Stones Ginger Wine

15ml Lemon Juice

5ml Grenadine Syrup

Pour into shaker filled with ice cubes. Shake and strain into short glass filled with ice cubes. Add 30ml of soda water, lemon to garnish. 




 

Halloween is Here.

The Bloodsucker - sounds bad. Tastes yum. 

2 tblsp Bacardi 
1 tblsp Cointreau 
1/4 cup pineapple juice 
1 Tbs. strawberry or raspberry puree

Pour rum, Cointreau and juice into a shaker with ice. Shake mixture, then pour into a rocks glass. Dip the end of a drinking straw into the berry puree, hold the tip of your finger over the other end and use the straw to squirt puree into the bottom half-inch of the drink, where it will sink in red blobs. Do not stir.

Tequila Sangria. Match made in Heaven.

  • 3 pineapple slices
  • 3 orange slices
  • 3 blackberries
  • 3 lime wedges
  • 1/4 cup tequila
  • 2 tablespoons elderflower-flavored liqueur*
  • 2 tablespoons sugar syrup
  •  1/4 cup pineapple juice
  • Splash orange juice
  • Ice, as needed
  • Red wine, as needed (recommended: rioja)
  • *Cook's Note: peach-, pear- or ginger-flavored liqueur can be substituted.

22 Degrees. That is summer in my book.

Watermelon Tequila Cocktail

Ok - I'll admit this is a bit fiddly but given how awesome it looks, it has to be done!

  1. 1/4 cup water

Creamy Cucumber and Dill Canapes

  • 225g cream cheese, softened
  • 20g italian style salad dressing (can buy New World or Countdown)
  • 125ml mayonnaise
  • 1 baguette, cut into 1.25cm thick circles
  • 1 cucumber, sliced
  • 2 teaspoons dried dill
  1. In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
  2. Spread the sliced bread with a thin layer of the cream cheese and top with a slice of cucumber. Sprinkle with dill.

Get a little Grapefruit down you......

Grapefruit Rumba 

This little beauty a sweet fruity punch that goes down the hatch in a jiffy. 

  • 30ml bacardi rum
  • 100ml pineapple juice
  • 75ml grapefruit juice
  • 200ml of soda water or mineral water
  • ice cubes

Put a few ice-cubes in a glass. Pour in bacardi, pineapple and grapefruit juice. Pour it all into a cocktail mixer and shake. Pour the mixed cocktail into the glass again, then add sparkling water. Serve with cherries, pineapple and umbrellas, if you like!

Cheese Cherry Pineapple

Keeping with the fruity theme, throw some cheese, pineapples and cherry's together on a toothpick. Harness the 1970's. Beaut. 


Spring is here. Whoop Whoop

This is called Alegria. I have no idea where it comes from but it looks like "spring" in a glass so I thought why not? 

  • 2 oranges, cut into 8 wedges

  • 1 ruby red grapefruit, coarsely chopped

  • 2 tablespoons caster sugar

  • 1 cup crushed ice

  • 125ml (1/2 cup) white rum

  • 125ml (1/2 cup) limoncello

  • 125ml (1/2 cup) chilled tonic water

Place the orange, grapefruit and sugar in a plastic bowl. Use the end of a rolling pin to pound until lightly crushed. Divide orange mixture among serving glasses. Top with ice. Pour over the rum, limoncello and tonic water to serve.

Smoked Salmon Yummy-ness. 

Cut thin slices of french bread.  Spread the bread with either camembert or cream cheese. Place thin strips of smoked salmon and top with any combination of creme fraiche, greek yoghurt, chives/dill, capers, black pepper and lemon juice. Delicious. 



The Road to Mandalay

We're off to Burma with the cocktail "A Night in Old Mandalay". Perhaps this is something Rudyard Kipling had a taste for?

1 shot Bacardi
1 shot Appleton Estate Light rum
1 shot Orange Juice
1/2 shot lemon juice
3 shot ginger ale
1 twist lemon peel

In a shaker half-filled with ice cubes, combine the Bacardi, Appletons, orange juice, and lemon juice. Shake well. Strain into a highball glass almost filled with ice cubes. Top with the ginger ale. Garnish with the lemon twist.

Delicious Burmese Split Pea Fritters. Nothing like a bit of deep frying.

1 cup split peas

2 medium onions, chopped finely

2 red chilies, chopped finely

1/2 teaspoon turmeric, ground

Salt to taste

Cooking oil for deep frying

Sliced onion and lemon wedges to garnish

Fill a pot with water and soak the split peas overnight for at least 6 hours. Drain, and use a food processor to blend the soaked split peas to a smooth paste. Mix in other ingredients except the cooking oil and garnishing. Form small balls from the mixture and flatten to about 1 cm thickness.

Heat a wok with the cooking oil and fry the fritters one at a time. Fry until it is golden brown. Drain on absorbent paper. Serve with the garnishing.

The Hurricane - cos its so damn windy out there.

The delicious Hurricane Cocktail originated in New Orleans. 

2 shots of Amaretto, 1 shot light rum, 1 shot of dark rum, 175ml orange juice, 175ml pineapple juice, 5ml lemon juice, dash of grenadine syrup. 

Fill tall glass with ice. Add all of the above, give it a swirl around. Garnish with slice of orange and a cherry on top or whatever your heart desires. 

Delicious Cheese Rolls (not because they come from New Orleans but because they are so yummy and I had forgotten all about them).

20 slices of white bread (crusts cut off), 1 serving kiwi onion dip (tin reduced cream, packet of onion dip mixed together with dash lemon), 2 cups of grated tasty cheese, 25g melted butter. 

Spread the dip on the white bread, roll tight. Lay on cold oven tray and dot with butter. Sprinkle the cheese over the top. Grill till done. 

Moscow Mule (and I'm not talking about the shoes).

Moscow Mule

There are untold variations of the Moscow Mule. Try this one for size. 

30ml vodka, 30ml lime juice, 90ml ginger beer and Ice. Throw the ice into tall glass, pour in the rest and muddle it all up. Bob's your uncle.  

How cool are the tin mugs below? I have no idea where to get those but I like them a lot.

 

Blini Yum

So to go with the Moscow Mule you need to have some Blini. This is basically baby pancakes, some caviar dumped on top with a dollop of sour cream. If your Russian friends have cleaned you out of caviar you can use fish or trout roe. All goes down the same way. Yumo. 


Get a Grapefruit from Grenada

Grenada Grapefruit Punch

This recipe is for one but load up to make a punch-bowl. 

30ml bacardi rum, 100ml pineapple juice, 75ml grapefruit juice, 200ml of soda water, ice cubes.

Put ice-cubes in a glass. Pour in bacardi, pineapple and grapefruit juice. Pour it all into a cocktail mixer and shake. Pour the mixed cocktail into the glass again, then add sparkling water.

Serve with cherries, pineapple and umbrellas. 

Grenada Chicken Wings with Nutmeg 

8 chicken legs (or wings), 
½ teaspoon pepper sauce,
 ¼ cup soy sauce,
 ¼ cup grated onions,
 2 cloves garlic (crushed),
 ½ teaspoon salt,
 ½ cup of nutmeg syrup (see below), 
¼ teaspoon ground ginger.

Nutmeg Syrup:
 2 tablespoons sugar,
 2 tablespoons water, 1 tablespoon dark rum, 
1 teaspoon nutmeg.
 Bring sugar and water to boil in small saucepan. Cook and stir until sugar dissolves. Stir in rum and nutmeg. Use when cool.

Season chicken with salt, pepper, crushed garlic and onions. Bake for 15 minutes at 190ºC. Remove chicken from oven and baste with mixture of nutmeg syrup, soy sauce and ground ginger. Lower oven to 150ºC and continue baking for one hour, basting frequently. Serve hot.

Sea Breeze

The Sea Breeze came out in the 1930's during Prohibition. Pretty decent result I reckon. 

  1. 50ml Vodka
  2. 50ml Cranberry Juice
  3. 50ml Grapefruit Juice
  4. Lime Wedge

Fill glass to top with ice cubes. Pour vodka, cranberry and grapefruit juice into glass. Garnish with Lime Wedge. 

       

 

 

 

Sweet & Sour Chicken Wings (not sure they're really American as such but pretty tasty).

1 kg  pounds chicken wings

1/2 cup sherry-wine vinegar

1/2 cup olive oil

2 tablespoons light-brown sugar

1 tablespoon paprika

4 clove garlic, smashed

1 teaspoon coarse salt

1/2 teaspoon freshly ground black pepper

Nonstick cooking spray

Place chicken wings in a large resealable plastic bag or large bowl. In a medium bowl, mix together vinegar, oil, sugar, paprika, garlic, salt, and pepper. Measure out 1/4 cup vinegar mixture and set aside. Pour remaining mixture over chicken; cover and transfer to refrigerator. Let marinate for at least an hour, or up to overnight.

Preheat oven to 450 degrees. Spray a baking sheet with nonstick cooking spray.

Remove chicken from marinade, discarding marinade. Transfer chicken to prepared baking sheet and bake, until juices run clear, about 30 minutes, basting with reserved marinade halfway through cooking. Remove chicken from oven and brush with any remaining marinade before serving.

Best of British. Pimm's & Cucumber Sandwiches.

Cucumber Sandwiches - Yumo! 

1 packet cream cheese, softened, 1/3 cup mayonnaise, 1 medium cucumber, peeled, seeded, and finely chopped, 1/4 teaspoon garlic salt, 1/2 teaspoon chopped fresh dill, 20 sandwich bread slices, 20 thin wheat bread slices.

Process cream cheese and mayonnaise in a blender or food processor until smooth, stopping once to scrape down sides.

Combine cream cheese mixture, cucumber, garlic salt, and dill.

Spread cucumber mixture evenly onto white bread slices, and top with wheat bread. Using a 2- to 3-inch round cutter, cut sandwiches, discarding edges. Or cut crusts from bread, discarding crusts, and cut sandwiches into quarters. Store cucumber sandwiches in an airtight container for up to 1 hour before serving.

Lovely Latino Punch with a Punch

I have no idea where this little Latino beauty hails from but give it a crack. Yum. 

2 cups of Smirnoff Ice, 2 cups Rosé, fresh tropical fruit, and ice. Fill a large jug with ice, add the Smirnoff Ice and rosé and stir. Add the fresh fruit. "Too Easy" as the saying goes.

Bolivian Mint & Mango Quinoa Salad

  • 110g/4oz quinoa cooked

  • 1 tbsp chopped fresh mint

  • 4 spring onions, including the green parts, chopped

  • 2 tbsp chopped fresh coriander

  • 1 mango, peeled, finely chopped

  • 2 tbsp olive oil

  • 1/2 lemon, juice only

Combine all the ingredients in a bowl and mix together. Serve with grilled halloumi, chicken, fish or any leftover meats.

Singapore Sling & Spring Rolls. Bring it on!

Singapore Sling anyone? Why not? Extra tasty with some Spring Rolls.

 

Singapore Sling 
3 tablespoon Gin
2 tablespoon lime juice
2 teaspoon sugar syrup (1/4 cup sugar, 1/4 cup water, bring to boil stirring till sugar dissolved)
4 tablespoon soda water
3 teaspoon cherry brandy or kirsch

Pour the gin, lime juice, syrup and brandy into a cocktail shaker with ice cubes and shake. 
Strain into high ball glass filled with ice cubes. 
Top up with soda water. Garnish with lemon and cherry if wish.

Singapore Spring Rolls 
1 pkt of small spring roll wrappers (50 sheets)
3 spring onions, white and green parts chopped separately
2 tbls of olive oil
1 garlic clove, crushed
1 tbls fresh ginger, grated
½ bunch coriander, stems and leaves chopped finely
1 tbls Thai yellow curry paste
½ cup of firm tofu, diced
1 carrot, diced
1 red potato, diced (optional)
1 tbls fish sauce
1 tbls kecap manis or tamari
1 tsp sesame oil1cup bean thread vermicelli, soaked in hot water, drained and chopped

Sauté white parts of the spring onions in the olive oil with the garlic, ginger and coriander stems for about one minute. Add the curry paste and keep stirring until paste starts to stick to pan. Add about 1 tbsp of water to create a paste. Now add the tofu, carrot and potato. Stir to coat the veggies in the paste. Now add the sauces and sesame oil and keep cooking gently until the veggies are tender – about 2 minutes. Finally add the noodles, coriander leaves and cabbage. Stir well. Taste and adjust seasoning if necessary.Peel the wrappers individually and cross over each other so you have a pile of cross-crossed wrappers place them on a clean surface. Put about 1 heaped teaspoon of mixture on each wrapper and roll up, tucking ends in as you go. Wrap in a second wrapper or they will break. Fry in a non- stick pan with a small amount of oil over a medium heat until they are golden, tuning to brown all sides. Drain and pile.
